Let's Get Down to No Sugar!

Over the past 3 years, we have gathered a number of requests for a diabetic friendly cake. It had been a long thought out process, baking is one thing, we had to understand the ingredients and how it will affect the texture, taste and flavour. We have tried working with gluten-free flour, we looked through the ingredients, sounds favourably good, we baked and failed. I guess for such an adventure, it takes a certain a-ha moment (like what Oprah would say), to really gather all your senses and work on that one moment of inspiration. 


Having to experience closely with family members who are diabetic helps us understand the situation a lot better- what their cravings are and what they hate. You can't just bake a cake by just throwing healthy ingredients all in a pot, and cast magic spells. Being edible is one thing, it has to taste like cake! The more you refrain them from consuming, they will want a bucket of it. Its a child-brain theory (not sure if it is legit, but you know what I mean).

"Being diabetic does not mean you refrain yourself from eating sugar (be it desserts) or carbohydrate. Try to split your meals into smaller meals so you do not get hunger pangs. Eating in moderation is important and essential. You may want to take note of food that contains very high GI (Glycermic index) It is not necessary that you eliminate them from your diet. You can balance your diet with low GI food items. "

To cut the long story short, we made it! Yes, we finally made a no white sugar and no white flour recipe! And it taste OMG like a cake! A tasty one!

Moving on, for those who are wondering how you can create a cake that DOES NOT contain white sugar and white flour, be it for a new change in diet or for a healthier living, try this recipe that we are going to share yourself!


Banana cake recipe

*turn oven to 180 degree. 
This recipe makes 2 x 6" cake

MIXTURE A:
2 tsp baking powder

MIXTURE B:
60ml canola oil
80g melted butter
1 x salt
1 ripe banana
2 TBS agave nectar
80g organic coconut sugar

MIXTURE C:
2 eggs
120 ml whole milk (you may swop with almond milk)

3 simple steps: 
Step 1. Mix all ingredients in mixture B in a stand mixer for 1.5 to 2 minutes at low speed
Step 2: Sieve mixture A and blend into mixture B until well mixed
Step 3: Pour in mixture C into mixer slowly, stop once all ingredients are well incorporated.

Line your pans with baking paper or spray with a non stick oil, and pour cake batter in. Let it bake for a good 18 minutes until cake tester comes out clean!

    1. Hello Michelle, how have you been:)
      Agave Nectar is not honey (although the color and texture looks like it). It is a natural sweetener that comes from a plant (agave). You can use them in your bakes or drinks, but you may want to ration your intake. Over consumption may have its side effects. If its for baking, you can consider using fruits like bananas for extra sweetness.
